
Potato scones recipe
Potato – or tattie – scones are a staple of any Scottish fry-up. A breakfast classic, once made they can easily be reheated under the grill or in your toaster. They are especially good lightly fried!
I was surprised how quick and easy these were to make – this mixture made 3 side plate sized scones which was more than enough for my family. They are lovely and light, and a delight with beans and egg for breakfast. Even my 14 month old loved them!
Ingredients
500g of mashed potatoes
100g of plain flour
50g of butter
Pinch of salt (although you can omit this if you prefer)
How to make your potato scones
A griddle pan is the best way to make potato scones though a frying pan can also be used, as well as in the oven. I baked mine in the oven and found the trick was not to let the mixture get dry.
Pre-heat the oven to 200 degrees centigrade.
Boil the tatties and then mash them thoroughly. Add butter and salt (if using)
Mix in the plain flour with the mashed tatties ensuring the mixture does not go dry. You will be left with a sticky dough.
Roll out the dough on a floured work surface to about 1/2 inch / 1 cm thick.
Cut out a circle the size of a side plate – with by hand or by cutting round one of your plates.
Score a cross into the top of the dough so it will make it easier to tear once it has been cooked.
Flour a baking sheet and place the potato scone onto it. Bake in the pre-heated oven for 15-20 minutes.
